I wanted to create a cake that was simple and I also wanted to include sweet potatoes or yams in the recipe. I had a can that was just begging to be used.

Since my mom would be taking this cake on her journey to Tennessee in the motor home, I knew I needed to create something that didn’t need to be refrigerated. So, you got it – no frosting.

I had a box of spiced cake mix and I also had some yummy apple cider and decided to use a package in the cake as well. I named my creation Sweet Potato Apple Cider Cake. It’s so good, I’ll probably make this again before the Holiday Season is over.

Sweet Potato Apple Cider Cake

Yields: 20 servings

Prep time: 10 minutes

Cook time: 25 minutes

Total time: 35 minutes


1 box (Duncan Hines) spiced cake mix

1 individual package spiced apple cider mix

1 cup canned yams/sweet potatoes, strings removed

3 eggs, beaten

1/3 cup vegetable oil

2/3 cup water


Heat oven to350°F. Spray (2) 9-inch round glass baking dishes or (2) 1-qt. loaf pans with butter cooking spray.

In a large mixing bowl, beat ingredients with a hand mixer until smooth.

Pour into prepared baking dishes. Bake for 20-25 minutes. (Bake 25-30 minutes for loaf pans.) Serve warm or at room temperature.

Note: No need for frosting, but if preferred, use a simple cheese cake or vanilla flavored frosting. Add nuts of choice for more texture and flavor.

    That sounds absolutely delicious. I have been researching recipes calling for yams or sweet potato. I think I will give this a try.

      Angie, these are really moist. If you want to, you can sub brown sugar for the apple cider. The spice cake really adds the most of the spice in the cake. Also, I may make this next time with yellow cake mix and allspice. Either way, I’m sure that the liquid in the cake was perfect!! I’m prob going to fix these later and also create for “gift cakes” next time as well. Enjoy!!
