Spicy, Sweet and a Healthy Treat


Sometimes the word healthy has negative connotations, especially when children are listening. These spicy and sweet quesadillas will tickle their fancy. Not only are they easy to create, they’re healthy too. These quesadillas are baked, so no hot oil in a skillet for these tortillas. Sneak in low-fat flour tortillas or whole wheat for a healthier treat.

Even the avocado and tomato salsa is healthy with no preservatives when using fresh-squeezed lime juice. Just enough flavor to add to the bar-b-que flavor of the buffalo sauce and wonderful sweetness of the sweet potato.  Yes, you read correctly, sweet potato.

Mashed pre-baked sweet potatoes make this even healthier and yummy! There isn’t a reason not to try this one! To add in the “easy” part, I washed and poked 4 sweet potatoes and placed in microwave and pressed my microwave’s preset “potato” setting 4 times. After they cooked, I simply set them aside to cool.

I used leftover baked chicken breast. You can use leftover chicken or try the pre-cooked, low-fat chicken found in the deli section or lunch meat aisle of the grocery store. I won’t tell them it’s healthy if you won’t! Enjoy!

Buffalo Sweet Potato & Chicken Quesadillas with Avocado Salsa


Yields: 16-20 wedges (appetizers) or 4 Quesadillas

Prep time: 20 minutes

Cook time: 10 minutes

Total time: 30 minutes

Ingredients:

4 medium sweet potatoes, baked, skins removed and mashed

8oz. whipped low-fat cream cheese

grated zest from 1 orange

2 Tablespoons brown sugar

4 green onions, chopped, divided

2 dashes Worcestershire sauce

2 or 3 dashes hot sauce

3/4 cup low-sugar buffalo wing sauce

1/2 Tablespoon honey

2 cups shredded or cubed cooked chicken breast

1-8oz. package shredded Monterey jack cheese

8-8inch low-fat flour or whole wheat tortillas

2 ripe Haas avocados, pitted, halved and chopped

3 roma tomatoes, chopped

1/4 cup cilantro leaves, chopped

2 teaspoons fresh squeezed lime juice

butter nonstick cooking spray

Instructions:

Preheat the oven to 400ºF. Coat 2 rimmed baking sheets with butter nonstick cooking spray.

In a medium bowl, mix mashed sweet potatoes with cream cheese, orange zest, brown sugar and 2 chopped green onions. Set aside.

In another medium bowl, add sauces and honey. Add chicken breast and toss.

Arrange 4 of the tortillas on the prepared baking sheets. Spread a couple tablespoons of sweet potato mixture on each tortilla. Spoon chicken mixture and sprinkle cheese on top, dividing among the tortillas. Top each with remaining tortillas. Pat lightly. Spray the tops with very light coating of cooking spray. Bake for 5 to 6 minutes.

In a small bowl, toss the avocado, tomato and cilantro along with 2 chopped green onions. Squeeze with lime juice. Set aside.

Remove filled tortillas from oven, carefully flip over and bake another 5 or 6 minutes, or until lightly browned and heated through. Cut each quesadilla into 4 wedges. Serve quesadilla wedges with salsa on the side.
