Chocolate Chunk Banana Muffins, need I say more?
Chocolate Chunk Banana Muffins
Yields: 2 dozen muffins
Prep time: 10 minutes
Cook time: 20 minutes
Total time: 30 minutes
2 cups all-purpose flour
1 Tablespoon baking powder
1/2 teaspoon salt
1/2 cup brown sugar
1/2 cup sugar
3 semi-sweet grated chocolate baking squares OR 2/3 cup grated chocolate
4-5 ripe bananas, peeled and mashed OR 1 1/2 cups mashed ripe bananas
2 large eggs, at room temperature, beaten
5 1/2 Tablespoons softened butter
1/3 cup milk
cooking spray with flour
Preheat oven at 350°F. Spray 2 12-cup muffin baking pans with cooking spray containing flour. Set aside.
In a large bowl, combine dry ingredients (first 6). Pour in wet ingredients (next 4). Stir to combine. With an ice cream scoop, scoop batter into muffin cups; 2/3 full. Bake for 20-25 minutes.
Slide knife around interior side of each muffin cup to release muffins. Cool on wire racks or plates.
Serve warm or at room temperature. Wrap with plastic wrap and store at room temperature or refrigerate.
