“Rocky” – Can Be a Good Thing!


I wanted a spin on regular brownies and saw a post about Rocky Road Brownies (at the A Dash of Sass blog) following a Martha Stewart recipe.  It definitely caught my eye. When I saw the photo that Kate had on her blog, I knew I had to create these. I grew up loving Rocky Road ice cream and this sounded very similar; nuts, chocolate chips and most of all, marshmallows.

I had a box of brownie mix, so I was going to tweak this recipe and create my own.

Rocky Road Brownies

Ingredients:

1 box Brownie Mix

2 eggs (per box instructions)

1/4 cup water (per box instructions)

1/2 cup oil (per box instructions)

1/2 cup chopped pecans or walnuts

3/4 cup semi-sweet milk chocolate morsels, divided

1 cup mini marshmallows

Instructions:

Preheat oven to 350 degrees. Grease or spray a 9 x 13 inch baking pan with non-stick cooking spray.

Mix brownie mix with eggs, oil and water until all ingredients are wet and combined. Add pecans and 1/2 cup chocolate chips and stir into mix.

Spread batter evenly in prepared pan. Bake until a toothpick inserted in center comes out with a few crumbs attached, about 28 minutes.

Remove from oven. Sprinkle with remaining chocolate chips and marshmallows. Bake until the marshmallows are puffed and beginning to brown and the chocolate turns shiny, roughly 5 to 8 minutes. Turn the pan every minute or so to ensure even browning.

Remove from oven and cool completely in pan. Cut with a knife, into 28 to 32 squares.
