I stared at leftover grilled chicken on a plate in the fridge, as I wondered, do I want to eat this again? When I had a thought. More like a virtual bulb going off over my head. Chicken Tacos.
I had fixed a pot of white rice (Something that I’ve mastered since I was younger.) and was going to have a simple meal. Just rice and chicken. Chicken tacos definitely sounded like a winner.
Looked into the cabinet and grabbed a can of diced, seasoned tomatoes with chilies. Dei Fratelli, of course.
I grabbed an unopened bag of Mexican blend shredded cheese and some flour tortillas. I warmed one of the pre-grilled chicken breasts in the microwave for about 1 minute. Chopped it and placed chunks along with a couple spoonfuls of warm rice and handfuls of cheese inside two tortillas. Topped with some of the seasoned diced tomatoes and chilies and a little more cheese. Sprinkled salt and pepper. VIOLA! Dinner is served.
It is so simple, truly, there is no recipe….just go with the flow of it!! Add whatever you may have on hand, (jalapenos, black olives, wild rice instead of white, avocado, onion, etc.) And of course, remember the Dei Fratelli tomatoes!!
My love of cooking has taken over. I was on the net one day and saw an ad for a recipe contest. I entered. Then, I entered another. Then another, and so on and when I won a contest... an entire year's worth of tomato products, I was hooked. Since then, I've entered many many different recipe contests. I have won a trip to New York, entries into cook-offs, a recipe published in a Kraft/Paula Deen cookbook and many food products and food related items. I enjoy cooking and entering recipe contests. I hope I spark an interest in others to create something they can be proud of.
